I am terribly adverse to wasting anything. I am not sure where that stems from but it's part of why when carving pumpkins I need to roast seeds and make pumpkin gut bread. 46 million turkeys will be sold this Thanksgiving, and while that wonderful meal could hardly be called a waste I was thinking there had to be a use for that leftover carcass that remains. That's when it occurred to me that it was time to make some homemade turkey stock. It makes a great base for turkey soup or use it in any recipe that calls for chicken stock.

Turkey Stock
Ingredients:
Leftover Turkey Carcass
1 Onion
2 carrots, chopped
2 stalks celery with leaves, chopped
6 fresh parsley sprigs
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon whole black peppercorns
1 bay leaf
Combine all ingredients in a large stock pot. You may need to break up the carcass with a cleaver so it fits in the pot. Add enough water to cover the bones by 2 inches, and then bring to a boil. Reduce heat to low and simmer for about 2 to 3 hours. Strain it through a fine strainer and let cool to room temperature. Refrigerate or freeze.
If freezing my tip for any stock is always freeze it in ice cube trays and then put the cubes into a freezer bag. This makes it easy to heat up exactly how much stock you want when you decide to use it.
